I made this but did a couple things different after reading reviews. Instead of 2 c milk, I did about 1/2 c milk and 3/4 c low fat sour cream to thicken it up. I also saved some of the cheese to create a layer of cheese on top instead of mixing all 2 c into the casserole itself in the beginning. Cooked same time as instructions and was a bit!

This easy breakfast casserole is infinitely adaptable and you can find variations and suggestions in the recipe Notes below. The version written below with sausage, mushrooms, bell peppers, spinach, and cheddar cheese is generally the most popular with guests. You can assemble the entire dish and refrigerate for up to 24 hours before baking.

I served this at a family brunch today. I used potatoes instead of bread since we had other breaded items on the menu. Maybe it would have better with bread but we were all underwhelmed. Was disappointed as I was looking forward to adding it to my repertoire. Will go back to my other tried and true egg casseroles.

Mix eggs together in a large bowl with salt and pepper. Layer hashbrowns, cheese and vegetables into casserole dish over the sausages then pour eggs in overtop. Bake for 45 minutes or until egg is cooked through.

There are varying opinions on whether or not to thaw frozen hashbrowns before making a sausage hashbrown breakfast casserole. Some recipes out there have you thaw the potatoes in the refrigerator overnight, but it's really not necessary with this recipe. It only takes a few extra minutes to cook this sausage hashbrown casserole using frozen potatoes, and all the cooking is done in the oven so there's no extra work for you!

This recipe is perfect to use for make-ahead meals, too. For an overnight breakfast casserole, simply assemble it in a casserole dish. Then, cover the casserole dish well with plastic wrap and place it in the fridge overnight. The uncooked breakfast casserole will keep well in the fridge for up to 3 days.

Yes! This sausage hashbrown breakfast casserole is freezer-friendly, making it perfect for future meals. You can reheat it for another breakfast, pack it into lunch boxes, or have breakfast for dinner. After baking the hashbrown casserole, allow it to cool to room temperature. Pack it up into airtight glass containers and freeze it for 2 to 3 months.

This hash brown casserole recipe is very forgiving; you can change the add-ins according to your preferences or what you have on hand. Try leftover meats, veggies, and cheeses of all kinds. Just chop or shred and toss them into the mix.

Been baking this for over 30 years. One trick my grandma taught me with breakfast casserole is to use a Bain Marie (water bath) when baking. Keeps the bottom and edges from over browning and allows more uniformity in cooking the entire dish.
